Lemon Basil Salad Dressing

Adapted from a recipe by Jessica Gavin

1/4 cup lemon juice

1/2 cup extra virgin olive oil or safflower or sunflower oil

1 tablespoon Dijon mustard

1-2 tablespoon raw honey

2 cloves garlic

8 basil leaves

1/2 teaspoon dried or 1 tsp fresh oregano

1/4 teaspoon salt

1/8 teaspoon black pepper

 
Add lemon juice, oil, mustard, honey, garlic, basil, oregano, salt and pepper to a blender or food processor.  Blend until well combined about 30 seconds. Adjust flavor (add more honey if needed).
