So Easy Squash, Tomato & Caper Sauce

Serves: Yields about 2 cups
Ingredients
- 1/2 cup white wine or hard apple cider
- 6 garlic cloves, minced
- 3-4 medium tomatoes, any color, diced
- 1 summer squash, chopped in bite size pieces
- 2 tablespoons cold-pressed extra-virgin olive oil
- 4 tablespoons finely chopped parsley
- 4 tablespoons finely chopped basil
- 3 tablespoons capers
Instructions
- Pour the wine into a medium sauce pan and bring the heat to high.
- Reduce the wine by half.
- Add the tomatoes, summer squash and garlic, and cook for 3-4 minutes on high heat.
- Reduce the heat to medium and add the olive oil, parsley, basil and capers.
- Continue cooking for one additional minute.
- Serve warm.
