Sweet and Sour Bok Choy

Adapted from a Cooking Light recipe

2 tablespoons rice vinegar
1 1/2 tablespoons oyster sauce
1 teaspoon maple syrup
2 teaspoons safflower or sunflower oil
1 pound bok choy or thickly ribbed Asian greens chopped into 2-3 inch sections
1 tablespoon thinly sliced garlic
1 tablespoon unsalted butter
2 tablespoons chopped fresh basil

Step 1

Combine rice vinegar, oyster sauce, and maple syrup in a small bowl. Heat oil in a skillet over medium-high. Add bok choy; cook until browned, about 4 minutes.

Step 2

Reduce heat to medium; cover and cook until tender, about 3 minutes. Add garlic; cook 1 minute. Add oyster sauce mixture and unsalted butter; cook, stirring occasionally, 1 minute. Sprinkle with fresh basil.
