Working Winters | Part II
The truth is, I’m really not the best at doing nothing. I crave that sense of accomplishment and the satisfaction I get from seeing my efforts literally providing nourishment for my community.

We spend so much of our lives in the middle, those commonplace days, weeks, and years, where it seems as if not much changes.
Beet Salad with Cumin and Cilantro
Clean the beets and place on the baking sheet. Roast for an hour or until tender with a fork.(Alternatively, boil beets until fork tender.) Cool, peel, and cut into bite-sized pieces.
Roasted Sweet Pepper Risotto
Heat oven to broiling temperature. Place peppers on baking sheet.
Yogurt Herb Dressing with Cucumber Salad
Put all ingredients except cucumber into a blender or bowl of a food processor and blend until smooth. Toss with diced cucumbers.
Lemon Basil Salad Dressing
Add lemon juice, oil, mustard, 1 tablespoon honey, garlic, basil, oregano, salt and pepper to a blender or food processor.
